Appetizers & Riesling: Avocado, Cream-Cheese and dates dip Vegetarian frittata with Hummus and black olive dip The avocado is one of Israel's top exports and is used in many ways: in salads, dips, appetizers and even as baby's first fruit. Dates In biblical times, harvest of dates and figs was a sign of good luck for the coming years. Centuries later, Ashkennazic Jews living in Harsh climates depended on dried fruits for vitamins and minerals and to enliven an otherwise bland diet. Hummus means chickpeas in Arabic. The most well known hummus is from Israel. To make this classic dish Jews added crushed sesame seeds and tihini. Vegetarian Soup with "Kreplach" & Carousel 2007 Kreplach, often called Jewish won tons, are an important symbol of Jewish traditional food. Lockshen dough (homemade pasta) filled with chopped beef meat is used for soup. We will serve kreplach in Vegetarian Soup and topped with grated cheese and fresh herbs. Jews served this soup on the eve of Yam Kippur and on the last day of Sukkath. Entree & Trilogia 2008 Chicken stuffed with Challah bread and mushrooms, served with carrot tzimmes and spice tunisian Couscous A tzimmes is a sweetened vegetable or meat dish, but most Jews think of carrot when they hear that word. Served at the New Years (Rosh Hashanah), sliced carrots are symbolic of gold coins, while honey symbolizes the hope of a sweet New Year. Couscous is a fine semolina pasta made from wheat. It is staple of North Africa, just as pasta is in Italy. Traditionally, couscous was cooked on top of a simmering stew. Dessert & Merlot Reserve 2006 Fresh Fruit Kuchen. Rich Buttery Cakes, baked with fresh seasonal fruit, were brought to America by German Ashkenazic Jews during several large waves of immigration. |
